Carrot Cake

One of the first quick breads I ever made (when I was, hmmmm, nine?). They make the kitchen smell lovely. (Special thanks to Old City Java for lending their space for this photo.)

One of my earliest baking memories: carrot cake. It's my dad's favorite, hold the icing. The carrot cakes I make now forgo the icing as well; they're topped instead with a generous dash of cane sugar and carefully arranged whole pecans.

Ingredients

The nine ingredients for the Carrot Cake include: sugar , all-purpose flour , eggs , light brown sugar , carrots , spices , oil , pecans and raw sugar .

Note: Baked goods may include additional ingredients such as salt or baking powder not listed here.
